Henk den Bakker is a food scientist with the University of Georgia Center for Food Safety, located on the UGA Griffin Campus. He received his master's degree in systematic biology, with a specialty in mycology and botany, from Leiden University in the Netherlands. His doctorate degree in mycology is from the National Herbarium of the Netherlands at Leiden University. He is a member of the American Society for Microbiology and the Genetics Society of America. Food Safety Bioinformatics
Food safety research usually involves analyzing live populations of foodborne pathogens like Salmonella, Listeria and E. coli, but University of Georgia food scientist Henk den Bakker fights pathogens by developing computer software.

University of Georgia Cooperative Extension Family and Consumer Sciences agents, like Rockdale County’s MaryBeth Hornbeck, teach people to cook healthier meals. Thanks to a grant from the Hospital Authority of Rockdale County, Hornbeck now travels across the county with a portable kitchen.
Just like their bodies, teenagers' brains are also still under construction and not fully developed. University of Georgia Cooperative Extension family specialists say this phase is a challenging time for teens and sometimes the entire family. Parents must continue to assist teenage "children" as they transition into adulthood. CAES News
Teenage Brains
Think back to your teenage years. Did you feel awkward, especially given the changes with your body and emotions? Today’s teens are no different. They are quiet, forgetful and sometimes even surly. They consume large amounts of food and sleep all the time. If I sound like I know them well, I do. I have two teenagers in my home and I have to remind myself daily that they are not little adults. They are experiencing monumental changes that affect their interactions.
Lines of school buses idling outside schools creates harmful air pollution and wastes fuel. To protect students' lung, and save engine parts, bus, and parents' vehicles, should not idle while waiting for students to exit school buildings, University of Georgia experts say. CAES News
Return to Structure
Summer break is almost over. That’s right — no more late nights, naps during the day and, my favorite, living without a schedule. While I hate to remind you that our time will no longer be our own, I hope to make it easier for parents, as well as teachers, to return to their respective routines, which includes getting children back to school. As parents, we are instrumental in our children’s educational success. There are some things we can do to prepare little ones for success in the classroom.

Kids Cooking Competition
When it comes to grilled cheese sandwiches, there are about as many variations as there are chefs: tangy sandwiches made of cheddar with hearty wheat bread and creamy versions made of smoked Gouda with crusty French bread. The 15 school-aged children who competed at the inaugural Fulton Fresh Kids’ Cooking Competition left no sandwich concept unexplored as they competed in teams and flexed their grilled cheese expertise.

It’s almost summer, and for the University of Georgia Cooperative Extension staff in DeKalb and Clayton counties, that can only mean one thing — road trip!
Terri Carter, a UGA Extension Family and Consumer Sciences county program assistant in Cobb County, Georgia, has found a unique way to teach nutrition and a history lesson at the same time. Carter's love of the South and her heritage led her to develop the “Food History of the South” program. She concludes her program by sharing healthy adaptations to traditional recipes like black-eyed peas and collard greens. She hopes her clients will think about those who introduced these foods to the South when they cook and serve a traditional Southern meal. CAES News

Radon Poster Winners
Three Georgia middle school students will meet Gov. Nathan Deal later this month in recognition of their work to alert Georgians to the dangers of radon.  
It took author Ina Cook Hopkins more than nine years to compile data, interview key players, write the text and work with designer Carol Williamson to complete a history book about Rock Eagle 4-H Center. A former Walton County 4-H'er, Hopkins refers to the book as her last 4-H record book and a “tangible way to give back to the organization that means so much” to her.
